Instructions

1. Preparing the Dough

Step 1: Mixing the dry ingredients

In a large bowl, whisk up the flour and salt together. Combine them in order to allow the salt to distribute throughout the flour.

Step 2: Mix in the Wet Ingredients

Make a well in the center of the flour and then mix in the egg, sour cream and butter which have been taken out of the refrigerator to soften. These ingredients should be combined in a bowl using a fork until the mixture forms.

Step 3: Kneading the Dough

On a flat surface sprinkle some flour and unfold the dough. Knead it for about 5-7 minutes until you obtain a homogeneous dough with a slightly sticky consistency and rather elastic. If the dough becomes too sticky add more flour in intervals starting with one tablespoon.

Step 4: Let it Rest for a Little While

Transfer the dough to a bowl and then cover the bowl with a wet towel and let it rise for about ½ an hour. This way, the gluten gets relaxed and allows one to roll the cookies at a later time if one wants to.

2. Preparing the Filling

Step 1: Cooking the Onion

At medium heat, melt the butter in a skillet. Saute the chopped onions until they become brown then blend it.

Step 2: Mix all the Filling Ingredients Together

The mashed potatoes, the shredded cheddar cheese, and the sautéed onions are mixed in a large bowl. Stir until the cheese is melted and the ingredients are well incorporated with the rest of the mixture. Finally, put salt and pepper and adjust according to taste.

3. Assembling

Step 1: The Preparation (This is the rolling out stage)

After the resting period, knead the dough on a lightly floured surface and then roll the dough to about ? inch thick. With cookie cutter or glass (about 3 inches in diameter) cut circles from it.

Step 2: Filling the Pierogi

Place a tablespoon of the potato and cheese filling in the center of the dough circle. It is important not to over fill it as this will become difficult to ensure that they are sealed appropriately.

Step 3: Seal the Pierogi

Pull the dough over the filling and fold it to create a half-moon shape. Bring the edges together so that they overlap and join tightly. To ensure that the dough fits tightly, the edges can be pinched with a fork.

Step 4: Heat the Pierogi

At medium heat, use a large pot to boil salted water. Carefully transfer the pierogi to the boiling water, which should be done in batches to avoid overcrowding. When they float to the surface this should take approximately 3-5 minutes of boiling. Using a slotted spoon, take them out and set them aside.

4. Cooking the Pierogi

Step 1: OPTIONAL – Fry the Pierogi

Pierogi is delicious when boiled, but when they are fried – another level. To begin, heat some butter in a skillet over medium heat. After boiling the snacks, fry them in a pan until they are crispy on both sides.

Step 2: Serve

Possible toppings that go well with this snack are sour cream, sautéed onions, or bacon pieces. They are best enjoyed hot and preferably right out of the kitchen.

Tips for Perfect Pierogi

1. Consistent Dough Thickness: Another important aspect is that the layers of the dough should be of equal thickness when stretching the dough. This also aids in the cooking process; otherwise the snack shall burst when boiling.

2. Avoid Overfilling: You should not stuff as much filling as possible because when cooking, the snack may open. Avoid compacting the filling too much into the dumpling and ensure that you use only a spoon of filling.

3. Seal Properly: It is of great importance that all the edges are well sealed and joined as closely as one can imagine. In case the edges are not well closed or sealed, it becomes very possible for the filling to spill out when boiling.

4. Rest the Dough: Make sure you do not ignore the resting period of the dough. This step is important as it prepares the dough for easy handling and rolling on the cutting board.

However, depending on one’s preference, there are varieties of fillings that one could make. Some popular variations include:

1. Meat Pierogi: Meat chopped and cooked with spices and onions.

2. Sauerkraut Pierogi: Onions fried and mushrooms to sauerkraut.

3. Sweet Pierogi: It can be filled with fruit preserves or sweetened cheese in case of making a dessert.

Conclusion

The preparation of homemade pierogi from scratch is not easy but it was really delicious, fun and enjoyable cooking experience that brings some of Polish flavours back home. As you can see, spending some time and efforts, it is possible to prepare such yummy and spicy dumplings as you wish. If you like your pierogi boiled or fried, whether they are sweet or savory, homemade pierogi will definitely become your family’s beloved dish. Enjoy and celebrate the beautiful result!
